Equipment

  • baking sheet

Ingredients

Buffalo Cauliflower

  • 1 medium head cauliflower
  • 2 tsp olive oil
  • 2 Tbsp ranch seasonings
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ¼ cup buffalo sauce more if desired

Quick Ranch

  • cup sour cream or mayonnaise. Vegan will also work
  • 1-2 Tbsp ranch seasoning
  • 1-2 Tbsp water to thin the dressing

Buffalo Cauliflower Wraps

  • 4 tortillas or wraps
  • sliced cucumber
  • 4 Tbsp feta or blue cheese crumbles vegan also works
  • baby spinach or shredded romaine
  • avocado slices

Instructions

  • Roast the cauliflower. Preheat the oven to 415º. Chop up the cauliflower into bite sized pieces, place in a large bowl. Add the oil, seasonings and then mix well! Make sure the seasonings are in every nook and cranny.
  • Add the seasoned cauliflower to a sheet pan, be sure it's not overlapping anywhere for the best roast. Pop in the oven for about 15-20 minutes or until it's lightly charred and tender.
  • Prepare the add ins by slicing everything up and set aside until you are ready to prepare the wraps.
  • To make the ranch, add the ingredients to a bowl and whisk everything together. Add more seasonings if you desire. Set aside until you are ready to serve.
  • Assemble the wraps. Heat up the wraps on the stovetop (I do it over the open flame but you can also do it on a frying pan to heat them up) layer up the wraps, drizzle with ranch extra buffalo sauce and enjoy.

Notes

  • Season well! this is the key to making this dish pop.
  • Be sure the cauliflower is chopped into bite sized pieces for easier biting and chewing.
  • I prefer some smaller bits, they get a great char in the oven and I love the flavor they add to the mix.
  • Use veggies you love. You can do shaved carrots, tomatoes, zucchini whatever you like really.
  • Taste the quick ranch as you go! You may want more ranch seasoning. You can use sour cream or mayonnaise both work great.
  • Store leftovers in an airtight container in the fridge for up to 4 days
