Apple Pie Egg Rolls

- 8-10 egg roll wrappers
- 3 fuji apples, peels and diced granny smith apples will also work
- 1 Tbsp fresh lemon juice
- ¼ cup white sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon *more or less according to preferences
- ¼ tsp salt
- ¼ tsp nutmeg
- ¼ cup walnuts, chopped
Corn Starch Slurry
- 1 Tbsp corn starch or arrowroot
- ⅓ cup water
Optional Icing
- ⅓ cup powdered sugar
- 1 tsp milk or water whisk the sugar and water together to make the icing.
Add the diced apples to low/medium heat in a skillet with the sugar. Squeeze the lemon juice in. Add sugar, spices, vanilla, chopped walnuts and corn starch slurry. Mix everything well. Let it simmer for about 2 minutes or until the mixture thickens.
Let the apple mixture cool down completely. Feel free to pop the skillet in the fridge for 15 minutes.
If cooking in the oven: Preheat the oven to 375º. Add about 4 Tbsp of apple mixture to the center of the egg roll wrapper. Place each roll on a parchment lined baking sheet.
Fold the wrapper into an egg roll shape. Brush the corner with oil or water to help the egg roll "seal"
If using the air fryer: place the rolls on parchment. Spritz with cooking spray. Cook for about 12-18 minutes on 350º flipping halfway through. Egg rolls should be browned and have little bubbles indicating they are crisped up.
Let the Apple Pie Egg Rolls cool down. Optional to drizzle with icing or melted caramel.
