Vegan Tea Cookies

These vegan tea cookies are made with a chia or flax egg and are the perfect treat to have with hot tea or before bed.  The icing has blackberry and hibiscus flavors in it, making them decadent and fun to frost!

Ingredients

  • ½ Cup coconut Oil
  • 1 tbsp chia seeds
  • 2.5 tbsp water
  • Cup all purpose flour
  • ¼ tsp salt
  • ¾ Cup sugar
  • ¼ tsp baking soda
  • 2 tbsp almond milk

For the icing

  • 1 scoop of MegaFood Relax + Calm* Magnesium Powder Blackberry Hibiscus Oasis Powder 
  • Cup powdered sugar
  • 2 tbsp almond milk
  • 1-2 blackberries for color optional

Instructions

  • Make chia egg. Whisk water and chia together let it sit for 5 -10 minutes until it forms a gel. Preheat the oven to 350 degrees.
  • In a small bowl, add lightly melted/room temp coconut oil and sugar together whisk together well to form a thick paste. Add in almond extract and chia egg, almond milk. Mix together. 
  • In another bowl, mix flour, salt, baking soda with a whisk. Slowly add the dry ingredients into the wet. 
  • The cookie mix will be dry and crumbly. You will form 1 inch balls with your hands and place them on parchment paper. Lightly press down with the palm of your hand to form a cookie. Sides will be a little crinkled. Feel free to form them a little or leave them crinkled.
  • Place in the oven for about 12 minutes. Let cookies cool and harden before moving or icing. 

For the icing

  • In a medium sized bowl, mix with hand mixer, powdered sugar, almond milk, MegaFood Relax & Calm Blackberry Hibiscus Powder. Ingredients will form a thick, spreadable icing. You can add more milk or more sugar to change the texture of your icing. Carefully ice cookies and enjoy! 

Notes

To make the pretty design on the cookies, first dip them into the icing and use a toothpick to straighten your line for the half dip look. Then mash up one blackberry into the remaining icing (you may need to make another batch if you need) You can drizzle just a little bit of the purple colored icing onto the white icing to give it a more girly special look!
