Lemon Herb Tahini

This lemon herb tahini dressing is a flavor explosion ready in 10 minutes or less. Excellent on salads, dipping veggies in and spreading on sandwiches. Easy to make, bright addicting flavor.

Equipment

  • high speed blender or food processor

Ingredients

  • ½ cup tahini, well stirred
  • 1 tsp minced shallot
  • 3 tbsp olive oil
  • 2 garlic cloves
  • ¼ cup fresh parsley
  • ¼ cup fresh chives
  • ¼ cup fresh dill
  • 2 tsp lemon zest
  • ¼ cup lemon juice, freshly squeezed about 2 lemons
  • ¼ cup cold water *see notes
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tsp maple syrup *see notes

Instructions

  • Recipe makes about 1 cup of dressing.
    Start with measuring out the tahini, zest your lemon then juice the lemon. Add everything into a high speed blender or food processor and mix until ingredients form a thick dressing. 
  • Add and extra water if needed (only 1 tbsp at a time) to thin the dressing if you want. I prefer mine a bit thick, similar to a dip texture. You can also season with salt and pepper to taste if you feel you want more. 
  • Transfer into an air tight container if not using right away, store in the refrigerator. Use as a dressing, dip veggies or chips in it or spread it on wraps and sandwiches.

Notes

*you may need more water to thin the dressing to the consistency you prefer. 
*honey will also work
