Healthy Buckeye Bars


Healthy buckeye bars are just as tasty as the traditional but with feel-good ingredients. They are no bake, easy to make and a huge favorite of mine, they remind me of Reese’s.

Equipment

  • 1 8x6 or 9x5 bread loaf dish

Ingredients

  • 1⅓ cup almond flour
  • 1 cup peanut butter
  • + 2 Tbsp peanut butter *both measurements yes. 1 cup + 2 Tbsp
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup chocolate chips or melts
  • 1 tsp coconut oil *see notes
  • ¼ tsp course sea salt for topping

Instructions

  • In a large bowl, mix almond flour, maple syrup, peanut butter, vanilla extract together. This will take a little patience to really get the peanut butter mixed well into the flour. 
  • In a parchment lined 8x6 or similar in size bread loaf dish add the peanut butter mix. Press it down with your hands and make sure it is evenly layered. Set in the freezer for about 30 - 40 min.
  • When the peanut butter mix is close to being done, add chocolate melts and oil to a medium sized, microwave bowl. Microwave on medium heat for about 2 minutes. Check after one minuter and stir then cook for another minute until chocolate is fully melted and smooth.
  • Pour the chocolate over the peanut butter mix. Smooth it out with a spoon or spatula, sprinkle with the course salt. Place in the fridge or freezer for about 30 minutes.
  • Once chocolate has hardened, pull from the fridge/freezer. Take out with parchment paper let it sit for about 5 minutes and carefully slice with a sharp knife into squares. Store in an airtight container in the fridge for up to 7 days or freeze for up to 3 months.
