Crockpot Peanut Clusters

Melt in your mouth Crockpot Peanut Clusters are perfect for the holidays. All made in one crockpot. Addictive and festive!

Equipment

Ingredients

  • 1 lb white almond bark (might be labeled as white candy coating)
  • 12 oz bag semisweet chocolate chips
  • 1 4 oz bar German sweet chocolate Bakers brand
  • 32 oz dry salted, roasted peanuts *see notes
  • ¼ cup holiday sprinkles

Instructions

  • Roughly chop the almond bark (optional) and german chocolate baking bar up into pieces. This just helps everything melt quicker but this step is not mandatory for great candy!
  • Lightly coat the crrock pot with a spritz of olive oil and set it to high. Add all chocolate, almond bark, semi sweet chips, german chocolate to the crockpot. Place a paper towel, or clean dish towel over the crockpot then place the lid over that. This is to prevent any extra moisture from falling in and seizing the chocolate! Don't skip this part. Cook for about 45 min. 
  • You will need about 3 cooking sheets for all the candy or a large flat surface where they can cool unbothered. Cover cookie sheet or surface with parchment paper. Pour sprinkles into a bowl and grab a tablespoon size spoon. Scoop peanut mixture out and make little mounds of candy about 1 inch apart from one another. 
  • Once you have the sheet filled with chocolate candy, sprinkle with sprinkles and move to the next empty cookie sheet. I recommend refrigerating flat in the fridge if you have room, or the garage works well for us here in Colorado since it's cold this time of year. If you only have one cookies sheet you can use cutting boards instead. 
  • Once they have solidified, carefully place them in zip lock bags and either freeze, leave in a bowl on the counter if enjoying that day or week or refrigerate for up to 2 weeks.

Notes

*cocktail peanuts will also work. 
*Freeze in a ziplock bag for up to three months or refrigerate for up to two week. You may also leave on the counter for about 4 days if eating right away. 
*don't skip the dish towel cover between the lid and the crockpot! This is important! 
*you can use chocolate bark if needed, but the almond bark will not change the flavor, it will still taste like delicious melty milk chocolate.
