Banana Bread Waffles

Banana bread waffles are a lush, addicting breakfast and so much better than regular waffles. Two of the ultimate brunch items combined into one and they cook quick! Ready in 20 minutes.

Equipment

  • waffle iron Belgium or regular will work

Ingredients

  • cup all purpose flour
  • ½ cup white granulated sugar
  • ½ cup walnuts optional!
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 1 cup ripe banana (about 3 banana)
  • 2 large eggs
  • ½ cup melted coconut oil *see notes
  • 1 tsp vanilla extract

Instructions

  • Mix all the dry ingredients into a large bowl whisk together and get clumps out (baking powder, soda, cinnamon, nutmeg, sugar, flour, walnuts). 
  • Mash up bananas and mix all wet ingredients together in a separate bowl including the banana and lightly and pour into dry ingredients. Mix together it's okay if your banana is still a little chunky it's great in the waffles that way. 
  • Grab your waffle Iron. Belgium or square will work. Turn it to medium high heat or to 4 minute bake time. Once it's up to temp, spray both sides of iron with a little oil. Fill the waffle iron as you would normally and let the banana bread mix bake. 
  • Cook all your waffles and serve with butter and/or maple syrup and enjoy.

Notes

*olive oil or canola oil will also work
