Simmer the apple cider in a small saucepan over low heat until it reduces to about 1/2 cup. Check it every 10 minutes it typically takes 15 - 20 minutes, it should be slightly thicker and more flavorful. Leave the seasoning deposits in the juice and let it cool to the side while you prep everything else
Set oven to 350º. In a large bowl, whisk flour, baking soda, baking powder, salt, apple pie spice, cinnamon, nutmeg together in a large bowl.
In a medium bowl, mix melted butter, egg, brown sugar, granulated sugar, almond milk, vanilla extract together. Pour into the dry ingredients, add the reduced apple cider. Stir everything together until it's well mixed. The batter may be slightly thick.
Grease a donut pan well with vegetable shortening or oil. Either carefully spoon the batter into the donut molds or pour batter into an icing bag and pipe the batter into the donut molds. Don't over fill as they will puff up a bit. Bake for 10-12 minutes or until the edges are lightly browned. Check with a toothpick to ensure it comes out clean.
While they are baking, melt the butter in a medium bowl. Mix the granulated sugar, cinnamon and apple pie spice in another medium bowl. Once donuts are finished let them cool for about 5 minutes or place on a cooling rack. Grease and fill the donut pan (if needed) again to bake the next batch.
Combine the granulated sugar, cinnamon, and apple pie spice together in a medium bowl. Dunk both sides of each cooked donut in the melted butter, then generously in the sugar topping, set on to parchment paper and continue. Enjoy!
