Apple Waffles

This Apple Waffle and Pancake mix has fresh apples shredded into it. With cinnamon notes and maple syrup perfect for brunch! This recipe is plant based and ready in under 20 minutes.

Ingredients

  • cup old fashioned oats
  • 2 tsp baking powder 
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp apple spice
  • 1 tbsp apple cider vinegar
  • 1 cup unsweetened almond milk
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract
  • 1 tsp canola or coconut oil
  • 4 tbsp shredded apple extra liquid sqeezed outPlace the oats in a 

Instructions

  • Place the oats in a high-speed blender or food processor on high for about 2 minutes to turn the oats into a flour.
  • Add all the dry ingredients into the oat flour and whisk together well. Shred your apple. Squeeze the excess moisture out of it. Be sure to save any apple leftovers for waffle garnish! 
  • Combine the dry ingredients with the milk, ACV (apple cider vinegar) and oil. Add the apple. Let the mixture sit for about 2 minutes so the milk can react with the vinegar. Place ¼ cup in a greased pan for pancakes on medium to high heat (about 3 minutes each side) OR place ½ cup of mix into a greased waffle maker and cook until finished (about 5 minutes per waffle) 

Notes

*chop your leftover apple and save for waffle toppings with the maple syrup.
*Use gluten free certified  ingredients to make this gluten free
*If making pancakes, this recipe makes 8 pancakes which is 4 servings
