Salad WIth Shrimp
This mexican inspired salad with shrimp is a flavor explosion in your mouth. It has a spicy sriracha aioli on top. Ready in 15 minutes.
- 1 lb medium shrimp 25-35 Count, peeled and deveined *
- 1 cup corn
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- ¼ tsp salt
- 7 cups romaine chopped
- ¼ cup mayo or greek yogurt
- 1 avocado
- 1 tbsp sriracha *
- 1 cup tomatoes optional!
- 4 tbsp goat cheese *
Step 1. Make your sriracha aioli. You will mix the may with the sriracha and squeeze some lime and salt into the mix.
Step 2. sauté your frozen corn in a pan. sprite a little oil in the pan and let the corn sit on the pan for about 5 - 8 minutes. Toss a few times. This will give the corn a nice roasted flavor.
Step 3. Set corn aside. Add shrimp and oil the the same pan. Season with paprika, garlic and salt.
Step 4. Chop all fresh ingredients including cheese. Layer onto salad. Drizzle aioli over the salad and enjoy.
- any shrimp will work here just cook accordingly
- add more sriracha if you like it spicy
- tomatoes are optional
- goat cheese is optional, add Mexican style cheeses if preferred.
