Salad WIth Shrimp

This mexican inspired salad with shrimp is a flavor explosion in your mouth. It has a spicy sriracha aioli on top. Ready in 15 minutes.

  • 1 lb medium shrimp 25-35 Count, peeled and deveined *
  • 1 cup corn
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ¼ tsp salt
  • 7 cups romaine chopped
  • ¼ cup mayo or greek yogurt
  • 1 avocado
  • 1 tbsp sriracha *
  • 1 cup tomatoes optional!
  • 4 tbsp goat cheese *


  • Step 1. Make your sriracha aioli. You will mix the may with the sriracha and squeeze some lime and salt into the mix.
  • Step 2. sauté your frozen corn in a pan. sprite a little oil in the pan and let the corn sit on the pan for about 5 - 8 minutes. Toss a few times. This will give the corn a nice roasted flavor. 
  • Step 3. Set corn aside. Add shrimp and oil the the same pan. Season with paprika, garlic and salt.
  • Step 4. Chop all fresh ingredients including cheese. Layer onto salad. Drizzle aioli over the salad and enjoy. 


  • any shrimp will work here just cook accordingly 
  • add more sriracha if you like it spicy
  • tomatoes are optional
  • goat cheese is optional, add Mexican style cheeses if preferred.
