Mushroom Tacos

Vegan mushroom tacos full of flavor and meaty texture. The perfect addition to your taco night recipe arsenal. Full of chopped mushroom , onions and black beans for the "meat" you will be wowed.

  • 2 cup chopped mushrooms *
  • ½ cup chopped onions
  • 2 tbsp chopped jalepenos
  • cup black beans
  • 2 cup cooked rice *
  • ½ cup chopped tomatoes for garnish
  • ¼ cup chopped cilantro for garnish
  • 1 tsp paprika
  • ½ tbsp garlic powder
  • ½ tbsp chili powder
  • ½ tsp cumin powder
  • ½ tsp salt


  • Step 1: You will finely chop the mushrooms, onions, and jalapeño Then add it to a pan to sauté. You don't want to over cook the mushrooms. We want the texture to be chunkier like a meat. Cook rice while you are doing all of this. 
  • Step 2. Brown your tortillas. Do this anyway you prefer. I like to grill mine on an open flame on the stovetop. I keep the heat on low and turn them frequently. You can also microwave them with a damp towl for 30 seconds.
  • Step 3. Build your tacos! Make them however you like, garnish with tomatoes and cilantro. I always add some cheese and sour cream to mine but you can top with anything you'd like.


*Any mushroom will work. I suggest baby bella or button
*Rice of any kind
*Add salt to taste - I always go lighter to start and add more as I go.
