Salmon Cobb Salad With Vegan Ranch

This Salmon Cobb Salad With Vegan Ranch can be whipped up in about 10 minutes. It is better than your local restaurants cobb and it's full of nutrients!

Ingredients

For the salmon

  • 1 4 oz fresh or thawed piece of salmon
  • 1 tbsp ranch seasoning

Vegan Ranch Dressing

  • 2 tbsp ranch seasoning * be sure it is vegan
  • ¼ cup tahini be sure it is well mixed
  • 4 tbsp warm water
  • 1 tsp fresh lemon juice

Cobb Salad

  • 4 cup chopped romaine
  • 2 hard boiled eggs
  • ½ sliced avocado
  • 1 tbsp diced red onions
  • 2 tbsp chopped tomatoes

Instructions

For the salmon

  • Rub salmon with seasioning. add a dash of salt and cook in an airfryer on 390 for 10 -11 minutes or pan fry for 4 minutes on each side.

Vegan Ranch Dressing

  • In a bowl add tahini and ranch seasoning. Add warm water 2 tbsp at a time. Mix with a whisk. Continue to mix until dressing is thinned and a dressing consistency. Add lemon and mix well. Set to the side

Cobb Salad

  • Wash and chop lettuce place in a large bowl. Boil hard boiled eggs for about 8 minutes peel and chop. Chop tomatoes and onions. Place on top of lettuce and mix well. Dress with dressing and add salmon to the top.
