Easy Strawberry Chocolate Banana Bread

This is not your average banana bread! This banana bread has chocolate and strawberry added in giving it a decadent twist. Great for breakfast or an after dinner treat. Get ready to be addicted!

Ingredients

  • 1 ½ cup all purpose flour
  • cup coconut sugar *
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • 3 over ripe bananas
  • cup melted coconut oil or butter *
  • 2 eggs room temp
  • 1 tsp vanilla extract
  • cup chocolate chips
  • 1 cup chopped strawberries Fresh or frozen!
  • cup granola optional

Instructions

  • PReheat oven to 350. Mash up the bananas, chop the strawberries. Add all your dry ingredients into one bowl: nutmeg, cinnamon, baking powder and baking soda, flour, sugar. Whisk well.
  • Then add all the wet ingredients together in another bowl. Vanilla, eggs, oil bananas, strawberries (only half the strawberries. The rest will be added on top of the bread mid-way cooking!) Add in the chocolate chips but keep half to the side as well for topping. Same with granola if you choose to use it! 
  • Add the dry ingredients to the wet ingredients and fold together. Do not over mix!  Pour mix into greased bread loaf pan. Bake for 55 minutes. Option to pull bread out at 30 minutes to place extra toppings on top and return to oven and bake the remaining time.

Notes

*Any sugar will work. If you use white sugar it will be a bit sweeter in flavor.
*any neutral oil will work: Canola, olive oil, butter or coconut oil. 
*If you want the bread to look pretty on top like mine, save some of the strawberries/chocolate to top on bread halfway through cooking time. try to move quickly in this process. This is also when you would add in the granola.
