Easy Strawberry Chocolate Banana Bread

This is not your average Strawberry banana bread! Optional chocolate chips and fresh ingredients make this bread a sweet delight the whole family will love.

Equipment

  • bread pan

Ingredients

  • 1 ½ cup all purpose flour
  • cup white sugar *
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 3 over ripe bananas
  • cup melted coconut oil or butter *
  • 2 eggs room temp
  • 1 tsp vanilla extract
  • cup chocolate chips optional
  • cup chopped strawberries Fresh preferred
  • cup granola optional for topping the bread
  • 1/2 Tsp cinnamon optional banana bread flavor
  • 1/3 Tsp ground nutmeg optional for classic banana bread flavor

Instructions

  • Preheat oven to 350. Mash up the bananas, chop the strawberries. Separate 4 tbsp of strawberries to side for topping the bread with.
    Add all your dry ingredients into one bowl: baking powder and baking soda, flour, sugar, chocolate chips, granola if using. Keep 3 tbsp of chips and granola to the side for topping the bread. Whisk the mixture i the bowl well.
  • Add all the wet ingredients together in another bowl. Vanilla, eggs, oil bananas, strawberries (not the amount used for topping). The rest will be added on top of the bread mid-way cooking!
  • Add the dry ingredients to the wet ingredients and fold together. Do not over mix!  Pour mix into greased bread loaf pan or a parchment lined loaf pan.
    Bake for 55 minutes.For the toppings:: pull bread out at 30 minutes place extra toppings over the brad and return to oven and bake the remaining time - about 25 more minutes. The top will be lightly browned. Be sure to check the middle with a toothpick to ensure it's baked through. The toothpick will come out clean. Let the bread rest and cool completely before removing from loaf pan and slicing.

Notes

  1. *Or coconut sugar. If you use white sugar it will be a bit sweeter in flavor.
*any neutral oil will work: Canola, olive oil, butter or coconut oil. 
*If you want the bread to look pretty on top like mine, save some of the strawberries/chocolate to top on bread halfway through cooking time. try to move quickly in this process. This is also when you would add in the granola.
