1Medium sized head of cauliflower chopped into florets
2tbs Oilive Oil
¼cup Barbeque Sauce
4tbs water to thin bbq sauce
2tbs franks red hot sauce
Fresh Herbs like cilantro for garnish
For the Salad
4cupspinach (or 1 cup per person)
1thinly sliced avocado
⅓cup tortilla chips, crushed
⅛tsp white miso paste
salt to taste
⅛tsp maple syrup
½tsp garlic powder
½tsp onion powder
½tsp finely chopped parsley
½tsp finely chopped dill
For The BBQ Cauliflower
Heat pan in oven to 400 degrees (a hot pan will cook the cauliflower quicker and give it more char)Toss cauliflower in a large bowl with olive oil salt and pepper to taste. Pour onto hot pan and cook for 30 minutes until cauliflower is softened.
While cauliflower is cooking, mix bbq sauce with franks red-hot and water. Once cauliflower is finished cooking place back into big bowl and toss in bbq sauce. Use parchment paper over baking sheet this time to keep from a sticky pan, pour sauced cauliflower. Bake on 450 for 10 minutes. Make your vegan ranch during this time.
Mix all ingredients with a whisk in a medium bowl. Add the warm water 1 tbs at a time. Sauce will slowly thin as you add in a bit of water at a time.
assemble salad and add toppings!
