Blueberry Banana Bread
This banana bread has a ton of flavor, a little crunch and it's a crowd pleaser for all ages (kids too!). Option to add granola for a pop of flavor.
Servings: 8 slices
- 1 ½ cup all purpose flour
- ⅔ cup coconut sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp cinnamon
- ½ tsp nutmeg
- 3 Over ripe bananas
- ⅓ cup melted coconut oil or butter
- 2 eggs room temp
- 1 tsp vanilla extract
- 1 cup granola optional!
- 1 cup bluberries Fresh or frozen!
Mix all the dry ingredients into a large bowl whisk together and get clumps out. Mix all wet ingredients together in a seperate bowl and lightly and pour into dry ingredients. Mix together well.
Bake at 350 in a loaf pan for 55 min or until cooked all the way through.
