Homemade cinnamon rolls have always been a bit intimidating to me. Something about yeast and the whole idea of baking up such a delicious treat has always made me fear making them at home. I did a lot of research and started testing recipes for a few weeks and alas, I found the easiest way to bake these babies. They are ready in under 30 minutes and no yeast or science is involved 😉

These vegan cinnamon rolls are dairy free! They have minimal ingredients and are EASY to whip up quick.
These cinnamon rolls have a fluffy biscuit like texture. They hold up quite well and you will be impressed that they are vegan and have no yeast.
Ingredients For Vegan Cinnamon Rolls.
Coconut Yogurt. I find the best yogurt to use in this recipe is a coconut based yogurt. If you are NOT vegan, any yogurt will work. I go for an unsweetened plant flavor.
Self Rising flour. You can find this at any grocery store at an affordable price.
Coconut oil. or vegan butter will also work. For a more fluffy golden brown top to these rolls, I brush them with butter before baking them.
Cinnamon. Very important for obvious reasons.
Almond milk. Any plant based unsweetened milk will work great.
How To Make Vegan Cinnamon Rolls.
Step one. Combine the yogurt with the self rising flour. This part will be messy if you are using your hands to knead the dough. The dough will be sticky, have a bowl of the flour nearby and use a small amount in your hands to help get the dough off your hands, stick together and form a ball in a ceramic or glass bowl. Let the dough sit, covered with a damp towel for about 10 minutes if you can. This will help the rolling process greatly!
Step two. Set Oven to 350 degrees. Flour your surface and gently roll the dough out. It will be stickier than most doughs since we aren't using yeast. Be gentle with the rolling pin, don't make the dough too thin and don't press too firmly. Form a large rectangle. If you can, using your hands lightly spread a little more flour over the top and flip it over.
Step three. Melt the coconut or vegan butter. In a small bowl whisk sugar and cinnamon together. Pour coconut or butter on the dough you rolled out. I use my hands to quickly spread it but you can bush it. Sprinkle cinnamon/sugar mixture over the coconut oil dough. Gently roll the mixture up into one long roll of dough. You may need a spatula to help move things along if it sticks a little to your surface. Just be patient and gentle with the dough!
Step four. Cut the Dough into 6 - 8 rolls and line them together touching in a parchment lined or greased 6 x 8 or similar size baking dish. Brush the tops of the rolls with more coconut oil or melted vegan butter. Bake for 25 - 30 minutes or until a toothpick comes out clean.
For icing: Whisk 1 cup of powdered sugar (confectioner sugar) with 2 tablespoons almond milk.

Lightly add a little more of the self rising flour. Be careful not to use too much, just enough to help get things to not stick.
