This mexican inspired salad with shrimp is a flavor explosion in your mouth. It has a spicy sriracha aioli on top. This salad is fresh and light but full of satisfying flavors. Perfect for a change up from taco Tuesday.
Why Make This Salad?
It is quite the change up from your usual salad. You can ditch the tacos and have something full of veggies.
This salad is gluten free and full of nutrients.
You can swap the protein out for chicken or steak as well!
Easy to make. This shrimp salad is ready in about 15 minutes or less.
Ingredients for this salad.
Shrimp. Frozen cooked, or raw. Fresh will also work. Just cook it according to instructions. I use cooked frozen shrimp and rinse them in cold water until thawed and cook them for about 4 minutes each side.
Mayo or Plain Greek Yogurt. Use which ever you prefer. I love mayo (I know it's weird but I do) so I use the classic aioli item. You can easily swap the mayo for a plain greek dressing.
Greens. I use organic romaine for this recipe. I feel the ingredients pair well with the light crispy lettuce.
Corn. I use frozen corn and typically blacken it myself but you can purchase roasted frozen corn from places like trader joes if you want to skip this step.
Goat cheese or Cotija.

How To Make This Mexican Salad With Shrimp.
Step 1. Make your sriracha aioli. You will mix the may with the sriracha and squeeze some lime and salt into the mix.
Step 2. sauté your frozen corn in a pan. sprite a little oil in the pan and let the corn sit on the pan for about 5 - 8 minutes. Toss a few times. This will give the corn a nice roasted flavor.
Step 3. Set corn aside. Add shrimp and oil the the same pan. Season with paprika, garlic and salt.
Step 4. Chop all fresh ingredients including cheese. Layer onto salad. Drizzle aioli over the salad and enjoy.
FAQs & Tips.
Any kind you would like. Fresh or frozen, cooked or raw. Just be sure to cook the raw longer until pink and tender.
I suggest Greek yogurt. It makes a great tangy substitute.
Yes, I would suggest using tofu in place of the shrimp for some more texture.

- ¼ tsp salt
- 7 cups romaine chopped
- ¼ cup mayo or greek yogurt
- 1 avocado
- 1 tbsp sriracha *
- 1 cup tomatoes optional!
- 4 tbsp goat cheese *
