They are not your average popcorn bars, they have a plant-based vanilla cake layer that pairs perfectly with the popcorn chocolate top.

Ingredients Needed.

Popcorn! This will be baked into he cake layer and on top of the cake layer. Any sweet or plain flavor of popcorn will work.
Arrowroot Powder. Similar to cornstarch, you can find it at any grocery store.
Butter. I use plant based butter for this recipe. I have not tried any other substitutes.
Almond Flour. My favorite type of flour and it is gluten free.
Chocolate. I suggest milk chocolate. If you are making these vegan, use chocolate that doesn't have dairy in it.
Sugar. Any sugar will work, I used white sugar, coconut sugar will work as well.
How To Make These Popcorn Bars With Cake Layer.

Step 1. Mix the cake layer ingredients together with a hand mixer or counter top mixer. The mixture will be a little dry but it will pride together nicely in your 8x5 or similar size baking dish.
Step 2. Top the cake with some extra bits of chocolate and gently press the popcorn down and into the raw mixture before baking. Bake on 350º for about 20 minutes.
Step 3. Melt the leftover chocolate with coconut oil in a double boiler or in a heatproof bowl over boiling water. Once cake if finished cooking, add a little more popcorn to it and drizzle the melted chocolate sauce over it. Pop into the freezer for about 20 minutes to harden. Pull out and cut into bars and enjoy!

If it sold at all grocery stores. It would be in with the flours and baking items. It is similar to corn starch.
No, you can also use caramel if you'd like!
Yes, but they won't be plant based if you do. Either one will be delicious.

- ¾ cup chocolate chips
- 2 tbsp coconut oil
Instructions
- Step 1. Preheat oven to 350. Mix the cake layer ingredients together with a hand mixer or counter top mixer. The mixture will be a little dry but it will pride together nicely in your 8x5 or similar size baking dish.
