These vegan chocolate chip cookie dough bites are the perfect treat for warm temps. They are healthier than other cookies and easy enough for kids to help you whip them up in the kitchen.

I always need a little treat after dinner. In the summer I typically go for ice cream, frozen treats or no bake cookies. These cookies are made with almond flour which makes them totally gluten free! If you aren't familiar with almond flour, it is made out of almonds and is a bit more carb friendly than it's counter part all purpose flour. Healthier Vegan Chocolate Chip Cookie Dough Bites (Gluten Free)
Ingredients
- 2.5 cup almond flour
- ⅓ cup creamy peanut butter
- 1 tsp cinnamon
- ¼ cup plant based milk (almond or cashew)
- 3 tbsp maple syrup
- 2 tbsp coconut sugar add 1-2 tbsp more if you want them on the sweet side
- ¼ tsp sea salt
- ¼ cup chocolate chips
Instructions
- Combine all the ingredients in a medium size bowl with a hand mixure. Use a cookie scoop to place equal sized balls onto a plate covered in parchment paper. push balls down and form into a cookie shape (or leave as a ball if you'd like). Let them chill for 10 minutes or eat right away!
