These peanut butter bites are crunchy, sweet and perfect for before or after a workout. If you have 5 minutes on your hands to whip these up you will have a healthy snack ready to go all week.
Nothing can come between a girl and her snacks. If you are like me, you get hangry easily and FAST. Working from home there is a lot of temptations when the pantry just a few steps away so I try to keep lots of snacks on hand. One of my favorite snacks are energy bites, they are full of protein and fat to help satiate you longer. Plus they have a sweet and salty aspect that is always pleasing to most pallets.
Kids and adults will love this recipe!
These bites have minimal ingredients
These bites have about 5 ingredients in them. You can customize them with what you have on hand but they are made with mostly pantry staples.
Panut butter. This is my go-to brand as far as ingredients and price goes
granola. Any brand will do just fine or you can make your own with my maple granola recipe here
Protein powder. This is optional, however I recommend it for a more filling energy bite. I use this brand of protein. If you opt to not use protein then you can use coconut flour.
You will want to keep these bites in the refrigerator. They will loose their shape a bit if they aren't chilled.
You can also keep them in the freezer if you want something a little more hard to bite into. I prefer them chilled. They will keep for about a week to a week and a half. You can top them into your oatmeal, have them with breakfast, before or after a workout or just have them for a mid morning or afternoon snack!

Equipment
- small mixer
- food processor
Ingredients
Instructions
- Toss all ingredients (except kosher salt) into a vitamin or blender and mix together. If mixing by hand crush granola by hand while adding to the mix.
- Scoop out portions with an ice cream scoop and roll together into equal size balls. place on parchment paper on a plate. sprinkle with kosher salt lightly. move to a storage container and keep in the fridge. Balls will keep in the fridge for over a week.
