This recipe for fresh green salsa is perfect for taco night, eggs, chips and dip and more. It can be made with tomatillos and un-ripe green tomatoes (optional). I originally got this recipe from my stepmother and adapted the recipe just slightly. I decided to add it to some rice with eggs in the morning and it was incredible yummy. You can also use it as a fresh salad dressing. The texture and flavors are a perfect melody.

If you grow tomatoes in your garden this recipe is perfect for you.
But if you don't, this recipe is STILL perfect for you. You can use un ripened tomatoes right from the garden, the green ones yes! We grow tomatoes every year and for some reason we are never able to grow tomatillos, they always die. So this is the next best thing. You will still want to get some tomatillos and use half and half. The tomatillos really bring this salsa to life!
If you have access to tomatillos than you will want to stock up on them! Both green un ripe tomatoes and tomatillos work beautifully in this easy green salsa together otherwise you will want to buy 1 pound of tomatillos.

You can make this salsa mild, medium or hot!
You get to pick the heat for this one. We will be using fresh chopped jalapeños in this recipe. You can use less for a mild heat or extra for a more spicy salsa. I prefer mine in the middle!

Fresh Green Salsa
Ingredients
- 2 tbsp grated or finely chopped onions
- 1 lb green tomatilla tomatoes (about 1½ cup chopped)
- 1 chopped jalapeño
- ½ cup chopped cilantro
- 2 tbsp fresh lime juice
- ½ tsp salt
- ¼ tsp minced garlic
- ¼ tsp pepper
- 1 chopped avocado
Instructions
- Chop tomatoes, cilantro, onions and jalepeño place in a medium sized bowl. Add in seasoning (pepper, salt, garlic). Add squeezed lime juice and chopped avocado. Cover and place in fridge to marinate for at least 30 minutes (it will be bitter if you don't let it refridgerate for a bit! do not skip this step). Serve with chips or on eggs anything you prefer!
