The perfect dish to use up leftover watermelon. This watermelon salsa is refreshing and perfect for summer BBQ's or for a poolside snack.
Have you ever had watermelon salsa? It is truly my summer favorite. I can't think of a better snack to bring or make for family and friends. This salsa always surprises my guests with the sweet little twist. It's made from fresh ingredients and takes little effort and time make.
I love trying to chop everything as small as possible and make it all the equal size, this way when you dip a chip in it you are more likely to get a little taste of everything and be blown away by how different and refreshing it is.
We often buy the biggest watermelon we can find. I have some tips for picking out the perfect watermelon here. But if you find a big watermelon you can enjoy it in several ways like this salsa, or my Watermelon & Feta Salad. You will still have some left over to eat on it's own if you'd like.
This salsa pairs best with some salty crispy tortilla chips but it would also make a great topper on some fish tacos. It reminds me of mango salsa but with a totally lighter flavor and texture. If you need an upgrade on your salsa arsenal this is it!

Easy Watermelon Salsa
Ingredients
- 2 cup Chopped Watermelon small cubes
- 1 Chopped Jalapeno
- ½ cup Chopped Red Onion
- ⅓ cup Chopped cilantro
- 3 tbsp Fresh Lime Juice (1 whole lime)
- 1 Chopped Avocado
Instructions
- Chop all the ingredients into small even sized pieces. In a large bowl add all of the ingredients together and gently mix together. Serve with your favorite tortilla chips or top fish tacos with this salsa. Enjoy!
