French toast has been a weekend favorite growing up and now to this day. Nothing makes a homemade brunch better than some warm vanilla/cinnamon french toast. We ran out of eggs when I went to make this recipe. I decided it was time to try and challenge myself with an egg-free version! I started to think and landed on a “chia egg” to give the bread a little more texture and crunch. Then I gave it the ultimate flavor by soaking it in So Delicious® French Vanilla Coconut Milk Creamer . This is one of my favorite creamers to use in my coffee, so of course I had to try elevating my usual french toast to a more decadent treat. The house smelled absolutely amazing and it just put a smile on my face.

Ingredients:

1 chia egg ( I used ground chia ) 1 tbsp ground chia + 2.5 tbsp of water soaked

1 C of So Delicious® French Vanilla Coconut Creamer

1 tsp of vanilla extract
-
1 tsp of ground cinnamon
-
Vegan butter or Avocado oil ( a few tbs handy)
you will need to be sure the pan is coated well the entire time you are cooking

4 pieces of Gluten Free bread or any other bread - bonus points if its stale!
Directions:

Whisk together all the above ingredients (leave the bread to the side) in a large bowl

Get pan hot, coat with butter or oil

soak the bread one piece at a time in the bowl or pour it into a rectangle dish to get an even “soak”

place bread on hot skillet in oil, add the other pieces one by one
-
cook on medium to low heat for about 7 minutes each side or until bread is browned and crispy.

Serve - with maple syrup or with So Delicious® coconut yogurt on top
For sautéed green apples - place 1 chopped granny smith in a pan with cinnamon and oil and sauté the piece of fruit until lightly browned and soften - top french toast with fruit and enjoy!
