Ingredients For This Recipe.
Chicken Or Cauliflower. Cauliflower is the perfect alternative for this recipe if you are vegetarian.
Wallaby Organic Yogurt. Always holds up great in recipes with high quality ingredients.
Seasoning. You are going to need lots of seasoning, if you don't have one or two on hand, no biggie. The yogurt dill sauce is what REALLY makes this recipe a crowd pleaser. Cumin, paprika, turmeric, oregano, salt, pepper.
Fresh Dill and Cilantro. Dried will work, but the real flavor is from fresh. Dill is the more important herb, if you don't have cilantro the recipe will still work.
Fresh garnish. Cilantro, feta, red pepper, red onion, cucumber, tomatoes all make great garnishes for this dish. The options are endless. I prefer cucumber, avocado, cilantro, red pepper and red onions.
How To Make Chicken Shawarma.
Step one. You will whisk together all the seasonings and chop your garlic up. Rinse your chicken and pat dry with a paper towel. For more tender chicken, tenderizer with a mallet before marinating.
Step two. Rub seasoning all over chicken or cauliflower if making vegetarian. Pour 1 tbsp olive oil over chicken or cauliflower and continue to rub in seasoning. Let the chicken sit for 15 minutes, or overnight in the rub.
Step three. Bake cauliflower or chicken on a sheet pan on 375 degrees F for 35 - 40 minutes until meat is cooked all the way through. While it is baking slice up your veggies and fresh garnish.
Step four. Make the yogurt dill sauce. Chop up herbs finely. All the Wallaby yogurt, lemon juice, cumin, salt, oregano, dill, garlic, cilantro (optional) to a medium sized bowl. Whisk together well or use an immersion blender.
Step five. Option: assemble pitas with chicken/cauliflower and fresh garnish and drizzle yogurt dill sauce over or add all ingredients into a large bowl toss together and fill pitas.
FAQ's & Tips.
Not a big deal, you can pop everything in the oven right after. Marinating in the rub just tenderizes the meat. If making with cauliflower skip marinating all together.
Great, make this recipe with cauliflower or tofu instead of chicken. Easy swap and all the same instructions.

- 1½ tbsp fresh lemon
- 1 tbsp chopped cilantro optional
- ½ tbsp chopped parsley optional

- 1 cup sliced red bell pepper
- ½ cup sliced red onions
- ½ cup fresh feta or mozzarella
- 1 cup fresh greens
