Blueberry Ginger Compote

3 pints of organic fresh blueberries
½ of a fresh squeezed lemon (less if you don’t like lemon)
1 tbs of honey or 2- 3 tbs of liquid stevia, I ONLY use Nu Naturals as its not bitter like most
1 tsp of grated fresh ginger OR 1 tbs of Nu Naturals ginger stevia

Simmer all ingredient in a small saucepan on the stove until blueberries are squishy and juices stick to the spoon you stir with. This is how you n it’s thickened.  Pour ingredients into a jar and refrigerate for up to two weeks. Great on toast, oats, pancakes and ice cream.
