One Pan Barbecue Tofu Veggie Bowl

One Pan Barbecue Tofu Veggie Bowl

I have been on a big tofu kick since trying to have a more vegetarian diet. I was starting to feel a little sluggish from all the meat I was eating during the week so I have been incorporating more plant based proteins and fish. Since I discovered how to get my tofu more crispy, I have been much more willing to experiment with it. Plus tofu is so cheap – I have had more spending money to travel or do fun things this summer. I am always looking for ways to simplify my meals so there is less clean up so I made a 1 sheet pan baked bbq tofu meal that you can toss in a bow and eat right after cooking!  – this should serve about 3 – 4 (or 2 if you eat way too much like myself 😉 )

  • 1 packaged of organic extra firm tofu – pressed and cut or torn into bite size pieces
  • 2 crowns of broccoli chopped into bite size pieces, stems included
  • 1 crown of cauliflower chopped into bite size pieces, stems included

In a separate large bowl whisk together the following:

  • 1/4  c bbq sauce ( you can do less and add a little more water to thin out if you are watching your sugar intake)
  • 1 tsp smoked paprika
  • 1 tsp chipotle powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 2 tbs of olive or avocado oil
  • 2 to 3 tbs of water
  • salt and pepper to taste

  • Preheat oven to 450 degrees
  • To press tofu, wrap in a clean dish towel and place something heavy onto to absorb all the liquid out of the tofu – then cut or rip apart into bite size pieces
  • toss pieces of pressed tofu in the mixture of spices and liquid above
  • Place tofu + chopped veggies on sheet pan ** parchment paper optional, might be best depending on how “non-stick” your sheet pan is (some stick more than others especially with the sticky bbq sauce)
  • bake for 20 – 30 minutes tossing often and until the tofu is crispy
  • place portions in bowls and enjoy!
