    Cauliflower Herbaceous "Stuffing"

    I have never been the biggest fan of stuffing. A little bit goes a long way with the traditional stuff (pun intended 😉 I have been seeing so many fun cauliflower substitutes all over the internet this year, so I was inspired to take a stab at my own recipe because I love cauliflower. I am not sure I would consider this recipe a stuffing - more like a great veggie side with equal the flavor of traditional stuffing. I added lots of extra herbs to this recipe to give it color and more depth to its flavor.

    Ingredients:

    • 1 container of Trader Joes Stuffing mix

      • Don’t have a trader joes? Or want to make it yourself?

      • 1 c of diced celery

      • 1 c diced white onions

      • 1/4 c finely chopped sage leaves

      • 2 tbs rosemary

      • 1/3 C fresh parsley (plus some extra for garnish)

      • 2 tsp fresh thyme

      • salt & pepper to taste

    • 1 chopped head of cauliflower into pieces steamed

    • 2 tbs butter (vegan butter or avocado oil works as well)

    • 1/4 c dried cranberries

    • 1/4 c chopped pecans

    Instructions:

    • add steamed cauliflower to a large pot with the stuffing mix (or the mix you created yourself)

    • on low to medium heat add butter and sauté the above mixture be sure to stir frequently - about 10 to 15 minutes to soften the onions and celery

    • add cranberries and pecans and sauté for another minute or so

    • add to a serving dish and top with extra fresh herbs

    • Enjoy!
