Banana Blueberry Breakfast Cookies

Banana Blueberry Breakfast cookies are the ultimate trade off from oatmeal. They are so easy for on the go mornings. They will also make a great healthy dessert with no added sugars.

These cookies are soft, chewy and full of texture. I love the pop of color the blueberries give them. I am a little obsessed with blueberries so I stock up on them year round. Frozen blueberries will work but I prefer fresh for this recipe.

Why are bananas so great for active lifestyles?

A lot of people fear bananas because they have a lot of natural sugars. This is true, however, don’t be so quick to avoid them! Did you know bananas are a great source of fast acting carbs which really help with muscle recovery after a workout. Plus they have lots of potassium.

These cookies are customizable

Like most of my recipes, these Banana Blueberry cookies are customizable. You you don’t like blueberries, you can add in all sorts of other ingredients like:

  • chocolate chips
  • coconut
  • dried fruit
  • nuts

Ingredients

  • 1/2 c almond butter

  • 2 large ripe bananas

  • 1 tsp vanilla or almond extract

  • 2 cups of old fashioned oats

  • 1/2tsp cinnamon

  • 1 scoop of vanilla protein powder (optional!)

  • 1/2 c of blueberries

Directions

  • Preheat oven to 350 (these will cook for about 10 – 15 minutes)
  • In a medium sized bowl mash ripe bananas well. Mix in all of the other ingredients well. Roll mix into equal size balls (gold ball size) and flatten lightly with your finger tips.
  • Bake on a cookie sheet with parchment paper. Bake fore about 10 – 15 minutes until browned.

These cookies will last about 1 week if kept refrigerated in an air tight container. I have a feeling you will eat them much quicker, especially if you share them with family.

Q: What if I don’t have almond butter? A: Peanut butter or cashew butter will work just fine!

Q: What if I don’t want protein in them? A: Totally fine to leave the protein out! They will turn out the same, they might just need a few more minutes to cook

Q:What if I want more protein in these? A: you can mix in an egg white, however the cooking time will very a little more
