Smothered Plant Based Breakfast Burritos

I have several vegetarian and vegan friends and they always feel a little left out at brunch. One of the more popular brunch items when we go out is usually the breakfast burrito full of meat and cheese. I decided to create a vegetarian/vegan friendly version that is simple to whip up, allergy friendly and devious. Those of you who are meat eaters, you may want to try this plant based version to health things up a bit in your diet, this version is equally as filling with half the calories!

The main ingredient to give these burritos a pop of flavor is Loma Linda®  Taco Filling. If you aren’t familiar with Loma Linda, they make shelf-stable Plant-Based Protein Meal Solutions and Meal Starters. They have a lot of comfort food options like Chorizo, Sloppy Joe and Taco Filling. They are gluten free, non-GMO and microwave friendly which makes it easy to whip up a vegan or vegetarian meal. I tried both the Chorizo and the Taco Filling for the meat substitute in this recipe, both were delicious. The Taco Filling has 6 grams of protein per serving so these burritos will keep you full for a while. You can buy the entire line of Loma Linda at your local Sprouts.

Ingredients:

For the Tofu Scramble:

  • 8 ounces firm tofu (225 g)

  • 1/4 tsp salt,

  • 1/4 tsp garlic

  • 1/4 tsp turmeric powder

  • 1/8 tsp ground black pepper

  • 1/2 C chopped green pepper

    Instructions for tofu scramble:

  • press extra liquid out of tofu with a press or with a towel and a heavy skillet. Break tofu apart with a fork in a bowl. Add seasoning and mix into tofu well. Place into skillet with 1 tbs of oil. lightly brown tofu and peppers set aside

For Burrito Filling (makes 2 large):

  • 1 large tortilla

  • 1/2 c vegan cheese or regular cheddar cheese shredded (plus some extra to melt on top of burrito)

  • 1 package of Loma Linda Plant-Based Taco or Chorizo Filling (cooked according to package)

  • 1 c of spinach divided into 2

  • 1/2 salsa

  • 1/2 sliced avocado

    Instructions for burritos

    Place tortilla flat on an oven safe plate or cookie sheet. Set open to 400 degrees. Layer tofu scramble and the above ingredients (leave salsa out for topping) assemble burrito and roll together, place a toothpick in burrito to hold it in place. Top with extra cheese. Place in oven for 4 to 6 minutes until cheese has melted. Keep an eye on the toothpick and pull out once cheese starts to melt to avoid burning the wood. Top with avocado and enjoy!
