BBQ Jack Fruit Tacos

Jackfruit is an interesting meat alternative. I find it similar to pork in texture, it picks up flavor easily with whatever sauce you combine it with and it’s super versatile and easy to cook with (right up my alley). I suggest you get the jackfruit thats already prepared for you in a can at Trader Joes or in the veggie department at most other grocery stores. The actual fruit itself can be a little scary in appearance 🙂

These tacos were so good any meat lover would think they are eating bbq pork without a doubt! I made my extra creamy with a homemade chipotle aioli.

  • 1 package of jackfruit, or 1 can from Trader Joes

  • 1 C of BBQ Sauce, if you buy the BBQ Jack fruit thats already marinating in bbq sauce then cut this to 1/4 C to add while it’s heating

  • 1/3 C of vegan mayo

  • 1 tsp chipotle powder

  • 1 minced garlic clove

  • lime juice

  • 1 small frozen bag of frozen corn (cooked as instructed on packaging)

  • 1 small jalepeno

  • cilantro

  • chopped red cabbage

  • chopped radishes

  • corn tortillas

  • Cook frozen corn according to package

  • heat up skillet with oil and add jackfruit to heat, keep on low heat. Add Bbq sauce and let it cook through slowly

  • Mix up mayo, garlic, chipotle, lime juice in a small bowl, set aside to top tacos with

  • Heat up corn tortillas in the oven on 250 or in a separate pan

  • Once jackfruit is heated all the way through, top corn tortillas with them, drizzle the aioli and top with the cilantro, radishes, jalapeños, cabbage and corn.

  • Enjoy!
